It never ceases to amaze me how fast the time goes.  My life has changed so much in the last two months and I find myself busier than ever.  But you want to know something?  I’m happy, really happy.  For the first time in a really long time I can truly say I am content with my life.  I love my new job, I’m having a really great time with my family and of course my hobby is awesome.

And speaking of my hobby, I am less than two weeks away from attending my first ever Food Bloggers Conference with the Food Bloggers of Canada.  I’m pretty excited to be heading off to Vancouver to meet some people I have been talking with online for a while and of course eating some really great food.

One of the unexpected treats I have been discovering is all the swag we are getting.  I feel so lucky, especially since we all have been getting some of this great stuff before the conference even begins.  My son has been excited to see the packages come to the door and begging me to open them pretty much as soon as I get home from work.  The first package that arrived had a beautiful Chicago Cutlery knife inside.  We had company over for dinner that night so I caused quite a stir, and it was fun sharing it with them.

The second package that came was from Nordic Ware.  We had a choice between cooking and baking and even though I love to bake I decide to challenge myself and got the cooking package instead.  Inside was the Eggs Plus Pan and a package of four colourful prep and serve bowls.  I was excited to give them a try.

The weekend after I received the package I wasted no time trying the pan out.  Because I had some leftover over veggies and cheese I wanted to use up I decided to try making omelettes first.  What I really loved about the gift was how thoughtful it was.  The four bowls I received were perfect for the four compartments of the Eggs Plus Pan.  Before you even get the pan ready you can put together whatever kind of omelette you are craving in one of the four bowls.

Next step is to heat the pan up following the directions.  It should be warm before you even put the eggs in.  Oh, I also gave the pan a light spray with non-stick spray before I even set it on the stove.  When the pan feels ready to go you take your little bowls of pre-made eggs and pour them in the individual parts of the pan.  Once the eggs started to set I poured water into the middle section and put the lid on to let the steam do its work.  I was pretty happy with the finished product, a very tasty and healthy breakfast.

The next day I decided to get more adventurous and try my favourite Pumpkin Pancake recipe from Isabelle Boucher off the Eat North website.  This provided a bit more of a challenge for me.  Once I got the batter inside the compartments I had a bit of a challenge figuring out how I was going to flip the pancakes over.  I figured out I could use the flat end of some of my wooden spoons that were small enough to get underneath the pancakes but by the time I got myself organized I flipped them over to find them burned.

Ok, so I’ll turn the heat down and try another batch.  The second batch wasn’t burned but when I served them up we found the centre to be a little doughy.  Oh well, pancakes in the pan will need a little more work.

Since my pancake catastrophe I have used the pan again for breakfast.  It is really great with just plain old eggs and I must say I am very happy with how quick and easy the eggs are to make in this pan.Nordic Ware Eggs Plus Pan Eggs

I was going to try some other things but I have been carried away with YYC Pizza Week (that’s a story for another day) so I haven’t had a chance to get back to cooking with the pan.  I’m excited to try steaming veggies next, with a different vegetable for each compartment and using broth instead of water to steam.  And of course there will be lots more eggs.

April 14 – Treat of the Week – Pain au Chocolat

This past Friday, after I put my kid to bed I started to think about Saturday morning breakfast.  It has been a busy couple of weeks for us and I haven’t had a chance to do a proper shop for a while.  My cupboards and fridge were bare, except for breakfast cereal.  And truth be told, I had being eating cereal all week for my snacks so that was the last thing I wanted for Saturday breakfast.  I wanted something special.  I didn’t even have any eggs in my house.

Desperately, I looked in my freezer for any inspiration.  And then there it was shining out from its little spot nestled among the ice cubes, one package of Pascal’s Patisserie frozen pain au chocolat!  I know I have talked about Pascal’s before on my blog but because they were my breakfast savior this week I thought it would be great to tell you again about their products, in particular my favorite, their pain au chocolat.

If you go visit Lison and Pascal at their kitchen located at 101, 5240 1A Street SE in Calgary, you will meet a couple dedicated to their love of French pastry.  Pascal is the chef behind the product and if you go to visit them he will be busy at his work.  When I went last he was pounding butter, prepping for all those layers of pastry.  And his partner Lison is the lovely face at the front telling you about their products and sharing their goal of bringing “pastry to the people”.  Their passion for their products is infectious and you can’t help but leave their kitchen with a smile on your face.

So back to this past Friday night, just before bed I took my lovingly prepared pain au chocolat out of the freezer.  I placed them with great care on my cookie sheet to let them rise while I slept my night away.

In the morning when I arose all I needed to do was to turn my oven on and place the risen pastries inside.  Then about 15 minutes later these beauties came out and were ready to eat.  My special Saturday morning breakfast was ready to go, with pastry and chocolate that melted in my mouth.  Served with a hot cup of coffee and my weekend was off to a great start.

So where can you get your very own Pascal’s Pastries?  You can get them directly from their headquarters, which is fun because you can see Pascal and Lison working away at their craft.  They are also available at various shops or cafes throughout Calgary.  Personally, I am often at Market 17 at Casel Marche so I get mine there.  You can also find a full list of vendors on their website at www.pascals.ca.

Eggs Benedict-Calgary

I love breakfast, who doesn’t?  In particular I’m fond of Eggs Benedict. This is not a treat you exactly eat everyday but if I happen to have a day off from work and everything else, this is something I will indulge in.  To me, there is nothing better than enjoying a hot cup of coffee, the bright sun and soft gooey, saucy eggs.

This past Friday I was lucky enough to try a place that has long been on my list.  Tucked away in Bridgeland is a place called Blue Star Diner.  It’s located at 809 1 Avenue NE, just off Edmonton Trail.  It’s not a big place but the warm décor immediately welcomed me in.

I was yet to have my first cup of coffee for the day so I was pleased to enjoy a hot cup from the local boys of Fratello. Then I was ready to make my benny decision.

Blue Star has four benny options to choose from, back bacon with grilled tomato, smoked salmon with avocado, blue star burger benny and Broek pulled pork.  All with local, fresh ingredients it was hard to make a decision but the pulled pork was calling my name.  I didn’t have to wait long and soon this plate of heaven came to my table.

When cut, the eggs exploded perfectly over the pulled pork.  I also really enjoyed trying to find the perfect bite ratio of pork, egg, potato and chive.  The potatoes were a perfect complement to the eggs, crispy on the outside, melting in my mouth on the inside.

Even though I have many other places to try this one will be seeing a repeat visit.

One other place I like to go when I feel like a drive is the Chuckwagon Café in Turner Valley.  Now a lot of people in town like to go here for burgers.  I have yet to do that because I am so addicted to the flat iron steak benedict.  There are many other options but this one has my heart.

At the base is a croissant sliced in two and grilled.  Then comes the juicy, fresh from the field steak and perfectly cooked farm fresh eggs.  Finally topped with a healthy dollop of hollandaise sauce and served with a delicious side of potatoes.  This makes the drive well worth it.  And the view from the back isn’t that bad either.

Now I just have to wait for my kid to grow up a little more so I can take him to all the great brunch spots I want to try on the weekend.
